They were never all bodyguards. Even in Words of Radiance, only Bridge Four and the first crews trained after that became bodyguards. The rest were training for other guard duties (patrolling the market, patrolling the wastes outside the Shattered Plains, hunting the slavers and bandits - such as the group that attacked the caravan Shallan joins in WoR, etc.) In OB (ch 122), it mentions that the men of Bridge 13 become Teft's Squires

Dalinar offered to let any leave that wanted to, and the rest were organized into 20 "Bridge Crews" in honor of their old life. Two people from each were trained by Bridge 4 (in medicine, tactics, cooking, etc) and then seeded back into the rest. According to the Coppermind at least 5 crews were given some sort of Guard duty eventually, including Bridge 4. https://coppermind.net/wiki/Bridge_crew
+robardin he/him
I like to think that, as being founded by a Windrunner with an honorspren, the Bridge crews go on to invent an Alethi-acceptable card game that can be played for stakes and that does not involve "predicting a future outcome" but does involve guessing or skillful figuring out of hidden information, while emphasizing coordination and cooperation with a partner to fulfill a contract (or to prevent its fulfillment). Honor! Bonds! Cooperation! What's not to like about the game of Bridge!
